There are many alternative products for egg white emerging in the market. Cocktail foam is one of them which I had the chance to try in this cocktail. I am and always will be on the egg white side but it is definitely a good alternative for egg white or aqua faba, so you may want to give it a try.

Ingredients
  

  • 60 ml Tanqueray Gin
  • 25 ml Lemon juice
  • 20 ml Lemongrass syrup
  • 2 dashes Plum bitters
  • 2 Plums
  • 2 dashes Cocktail foam

Instructions
 

  • Remove the pits of the plums and muddle in your shaker. Add all ingredients and give it a dry shake. Add ice and shake again. Double strain into a chilled coupe glass. Garnish with a lemon zest. Cheers! 🍸
