Gently crush the allspice berries in a mortar and pestle. (Do not grind them into powder.) Then, roast them in a pan for a short period. (until their aroma begins to emerge). In a saucepan, mix the sugar with water and heat and mix until the sugar is dissolved. Add the crushed allspice berries. Once the mixture comes to a boil, reduce the heat and let it simmer for 3-4 minutes. Turn off the heat and let it cool. After it has cooled down, strain the mixture and bottle it.
