Today’s cocktail is a twist to the well-known pre-prohibition cocktail; the Clover Club. It derives its name from the gentlemen’s club which met in the Bellevue-Stratford Hotel in Philadelphia in the 1880s. Created as a signature cocktail for this club, it is basically composed of gin, fresh lemon juice, raspberry syrup and egg white. Since the mulberry season is here, I made a small twist to this classic simply by replacing the raspberries with mulberries. Another variation will follow. ✌🏻
