I think everyone loves Clover Club. A simple combination of gin, lemon, raspberry syrup and of course egg white. It is a pre-prohibition classic and can be traced back to the late 1800s. I generally prefer using London Dry gin for my Clover Club and this cocktail is a small twist to it using lychee liqueur and using fresh raspberries instead of the syrup. A perfect foam always makes it better.
Ingredients
45mlBeefeater Gin
30mlKwai Feh Lychee Liqueur
30mlLime juice
15mlSimple syrup
5-6Raspberries
Egg White
Instructions
Muddle raspberries in the shaker and add the rest of the ingredients. First dry shake, add ice and shake again. Double strain into an ice-filled glass. Garnish with raspberries. Cheers! 🍹
