Basil Syrup
It may be an optional ingredient if you don't like to store fresh basils
Ingredients
- 250 ml Simple Syrup
- 20-25 Basil Leaves
Instructions
- Bring a pot of water to a boil. Add basil leaves to the boiling water and keep for 15 seconds. Take the leaves, drain and add them to a cold water (preferably ice bath). Keep for 10-15 seconds. (*blanching) Place the leaves between paper towels after draining and remove the excess water. Blend the leaves and simple syrup and fine strain. Bottle and keep in the refrigerator.
Notes
Blanching method (first soaking the greens in hot water and then shocking them in cold water) stops the activity of enzymes that cause darkening, your syrup will both preserve its green color and last longer. So be careful not to skip this step.
