Inspired from a French appetizer and created at Two Schmucks

Melon, Cheese & Pepper

This is a recipe of Juliette Larrouy which she created at @two.schmucks, Barcelona. I was planning to make a cocktail with cheese foam when I came across this recipe on @liquor website. The cocktail is inspired from a French appetizer; melon, balls of mozzarella cheese and black pepper. I prepared everything according to the recipes given, only used melon instead of cantaloupe since it is hard to find here in Turkey. The base is delicious, however, the foam is so milky for my taste which I believe it needs a little bit more fat and salt. 

Ingredients
  

  • 45 ml Gin
  • 30 ml Dry Vermouth
  • 75 ml Melon Cordial
  • 2 dashes Peychaud's Bitters
  • 1 dash Saline Solution (1:10)
  • Mozzarella Foam

Instructions
 

  • Add the gin, dry vermouth, cantaloupe cordial, bitters, and saline solution into a large shaker tin with ice and throw from one tin to the other repeatedly to aerate and dilute. Strain into a glass over a large clear ice. Top with foam and garnish with ground black pepper.

Cantaloupe cordial recipe for Juliette Larrouy's well-known cocktail Melon, Cheese & Pepper. If you can't find cantaloupe (not widely available in Turkey) you can use honeydew melon.
