Mozzarella Foam
Mozzarella Cheese Foam recipe for Juliette Larrouy's well-known cocktail Melon, Cheese & Pepper.
Equipment
- 1 Cream Siphon
- 2 N2O Cartridges
Ingredients
- 200 gr Stracciatella di Bufala
- 200 ml Milk
- 7.5 ml Saline Solution
- 5 ml Balsamic Vinegar
- 5 ml Simple Syrup
Instructions
- Combine all ingredients in a container and stir until well mixed. Pour the mix into your siphon and charge with two N2O gas cartridges. Shake and wait in between each charge. Keep in the fridge for at least one hour before use. Always make the first trial into a sink.
