Montelobos Espadin Mezcal is produced in the Oaxaca region of Mexico, famous for mezcal production, and it is made from the Espadin agave, which is one of the most commonly used agave species in mezcal production. Mezcal production involves roasting the agave hearts, known as piñas, in underground pits, crushing them to extract the juice, fermenting it, and distilling it. Montelobos is produced using traditional methods, including roasting the piñas in earthen pits lined with volcanic rocks and crushing them with a large stone wheel called a tahona, which is also made from volcanic stone. It’s worth noting that the weights of Tahona stones can reach up to 2 tons.
If you’ve had the chance to try it, you know that it has a smoky aroma and flavor profile. One of the reasons I enjoy Montelobos is for this characteristic. Depending on the desired level of smokiness in cocktails, I can also pair it with with tequila with changing ratios.
